Ask The Fromager
Do you feel like choosing cheeses for a tasting is a daunting task? How to serve it? How much to buy? How to keep it? This is your opportunity to ask the cheese expert all your cheese related questions while enjoying some of the caves best examples with delicious wines to match them.

Cheese & Wine 101
In this single session class, the instructor will provide a roadmap for matching various cheese types with the wines that best suit them. They will introduce cheese basics, including milk types, textures and flavors as well as how to shop for, care for, and serve fine cheeses. Then they'll guide you through choosing wines that complement each cheese type. You'll be invited to sample some of the cheese and wine pairings and discover marriages that suit your own personal taste.

Flavor Combinations with Champagne, Cognac & Cheese
Explore the possibilities that unfold when some of the world's most exquisite Champagnes and complex, elegant Cognacs are matched with a judicious selection of the finest hand-crafted cheeses. The instructor will reveal divine marriages made in heaven, while Oumy Diaw of Champagne Gosset and Cognac Frapin presents top Champagnes and Cognacs from these two internationally-renowned producers.

French Cheeses & Wines
Artisanal celebrates the unique combinations of France's best vintners and cheesemakers. The instructor will present exquisite French cheeses with some of the country's best red and white wines for flavor combinations that will leave a lasting impression.

Great Gifts of the Basque
The Basques are one of the world's most resilient civilizations. They have never really been conquered and have always fiercely guarded their culture, with its unique language and tremendous craftsmanship. It is no wonder that their cheeses are simply magnificent. Paired with some of their unusual wines, this will be a night to remember.

Old World Cheeses & New World Wines
Stilton and Port, Roquefort and Sauternes, Cheddar and Ale…the cheese pairings we know best are as good as the ones that we don’t! That’s why Maître Fromagier, Max McCalman assembled this theme tasting which pairs New World wines from California, Australia and South America with timeless Old World cheeses from Europe. As always, the class will include informative stories about the cheeses, wines and the fromagier's valuable and entertaining opinion.

Raw Milk Cheese: Separating Fact from Fiction
Enjoy an assembly of an all-star selection of cheeses that are exquisite examples of how the flavors in cheese are best represented by using raw milk. A lively discussion will include information about nutritive values, culture and traditions, laws and, of course, controversy both in Europe and the US. Paired wines will complement and enhance the experience.
